Mijenta Maestra Selection No. 3 is a high-proof blanco tequila created by Maestra Tequilera Ana María Romero as an homage to tequila’s history and traditional production. Fully mature Blue Weber agave, grown near the shoreline of Lago de Chapala in Jamay, Jalisco, is slowly cooked in an oven made with volcanic stone from Popocatépetl, crushed by tahona, fermented with agave fibers in wooden tanks, and distilled in copper pot stills. Resting in clay pots for 15 days adds another layer of texture and depth before bottling.
